Vinification
The two varieties are vinified separately, with fermentation in steel tanks
controlled temperature for the Vermentino and in wood for the Viognier.
Refinement
The Vermentino rests in steel, while the Viognier ages in French oak barriques.
At the end of the six months of refinement, it is blended and bottled.
Tasting
It has a straw yellow color with greenish reflections. It has a fresh, rounded flavour,
with a good body and a long persistence. The scent is intense, with herbaceous notes,
candied citrus fruits, peach and apricot, sage and marine hints.
Pairings
Able to marry wonderfully with various fish and meat dishes.
